EXPERT TIPS

  • Dry the chicken before. The chicken pieces are then wiped using a towel to get rid of any water and to assist in making the Greek marinade for chicken stay on the meat.
  • Let it marinate for a few hours. This recipe for chicken has a highly flexible marinating period. If you are worried about being running short of time, think about marinating the chicken in advance and storing it in the refrigerator until you’re ready to cook it.
  • Warm the pita bread first. To soften pitas/flatbreads and make them more flexible to fold, heat their in the microwave about a minute. They can also be heated by using a medium-high temperature gas flame on the stove (but be sure to watch them carefully) and then flip them using an apron or tongs. This produces a lovely charcoal.
Casey's top Tip:If you're short on time, purchasing chicken tenders that are already cut and pre-sliced, as well as the The Trader Joe's Tzatziki sauce (or an alternative brand of the store-bought tzatziki sauce) will take about 10-15 minutes! #winning

Substitutions AND CHANGES

  • chicken – You are welcome to try different cuts of chicken, such as tenders or chicken thighs. I like skinless breasts of chicken tenders, but any cut is acceptable in this case.
  • Add a bit of crunch Try adding some chopped greens such as Arugula, baby spinach or Romaine lettuce.
  • Greek condiments If you enjoy Greek food, think about adding additional delicious Mediterranean flavorings like the kalamata olives as well as feta cheese.
